Selecting a timer comes down to three things: supply voltage, switch configuration, and whether you need a hold function. A DPST unit switches both legs of a 240V load, while SPDT gives you a changeover contact. Hold lets the load stay on indefinitely, which is wanted on a shop exhaust fan and specifically unwanted on a bathroom fan where the point is that it shuts itself off.

Common questions
What does the hold option on a spring wound timer do?
A timer with hold has a position past the maximum setting that keeps the load energised until somebody turns it back. Without hold, the load always drops out when the spring winds down. Bathroom fans and heat lamps are commonly specified without hold precisely so they cannot be left running unattended.
SPST, SPDT or DPST, which switch configuration do I order?
SPST breaks one ungrounded conductor. DPST breaks two, which is what a 240 volt load or a switched neutral arrangement needs. SPDT gives a common with normally open and normally closed contacts, so it can transfer between two circuits. Match the configuration to the load voltage and to how many conductors have to open.
Will a water heater time switch handle my tank?
Water heater time switches are rated for the voltage and resistive load of a tank element, commonly 240 volt in a NEMA 1 enclosure meant for indoor mounting. Compare the element wattage against the switch rating, and confirm the enclosure type suits the location. Damp or outdoor mounting calls for an enclosure rated for that environment.
Should I order the mechanism only or a complete timer?
Mechanism-only listings, such as the 24 hour defrost timer mechanism, are replacement internals for an existing enclosure and arrive without a case or cover. New installations need the complete unit. If you are servicing a working setup where only the clock motor or contacts gave out, the mechanism is the cheaper repair.
