The Luminiz DE85CCTW is an 8-inch slim LED recessed downlight with five selectable colour temperatures from 3000K to 6000K, 18 W and 1500-1600 lumens, rated for wet locations. It comes with its own junction box and driver and needs no housing, so it can go in right under joists.

Pro tip from the counter
Set the colour temperature selector on every downlight to the same position before they go into the ceiling. Once a room is installed, a single fixture left on 6000K among 3000K lights stands out, and the selector is awkward to reach after the fact.
